TEHNOLOGIEI DE FABRICARE A HALVALEI DE FLOAREA
SOARELUI

REZUMAT
Halvaua din floarea soarelui este recunoscută ca fiind un produs zaharos utilizată atât ca
și desert, cât și ca o gustare ca atare încă din cele mai vechi timpuri. Deține o valoare energetică
importantă, însă toate componentele ei se găsesc într-un echilibru din punct de vedere
nutrițional.
În urma analizării opiniei consumatorului printr-un studiu de marketing s-a constatat
faptul că halvaua displace atât din punct de vedere organoleptic, datorită conținutului ridicat de
ulei care se separă pe timpul depozitării, cât și economic, datorită prețului de cost ridicat.
Astfel, s-a recurs la introducerea a două ingrediente noi, amidon și înlocuitor de unt de
cacao, pentru rezolvarea acestor probleme întâmpinate. Acestea ingrediente au fost introduse
separat în trei cantități : 1%, 3% respectiv 5% pentru fiecare dintre ele. Halvaua obținuta a fost
depozitată atât la temperatura camerei, cât și la temperatura de refrigerare (4ºC) și s-a urmărit în
fiecare săptămână cantitatea de ulei separată.
De asemenea toate probele obținute au fost supuse unei analize senzoriale precum și unei
analize asupra texturii (duritatea) produsului.

ABSTRACT
The sunflower halva it’s recognized like a confectionary product used both like a desert
or as a snack since ancient times. It holds a significant energy value, but all the components are
in a nutritional balance.
After analyzing the consumer’s awareness through a marketing study was found that the
halva dislike both the organoleptically due to the high content of separated oil during storage
and both economically due to his high cost price.
Thus, we resorted to the introduction of two new ingredients, starch and cocoa butter
substitute, to solve these encountered problems. These ingredients were introduced separately in
three amounts: 1%, 3% and 5% for each of them. The obtained halva was stored at both room
temperature and refrigerated (4°C) and monitored every week the amount of separated oil.
Also all the obtained samples were subjected to sensorial analysis and an analysis of the
texture (toughness) of the product.
